Step 1
Roughly chop everything (about 1” pieces, I did ½” pieces for the celery so as not to get the long filaments in the stalk… they don’t blend well with a hand blender), Use only the parsley leaves as much as possible.

Step 2
Put everything in a stew pot, except the parsley leaves and pumpkin seeds. Use just enough water to cover the vegetables (about 4-6 cups). Bring to a boil and simmer for 10-15 minutes. Turn off heat and add parsley and pumpkin seeds. If using a hand blender, you can blend until it is a consistency you like. If using a standard blender, let it cool for about 15-20 minutes. Makes about 3 quarts.
