BEEF MINCE CASSEROLE WITH HERB AND CHEESE COBBLER

2 Tbspextra virgin olive oil
1brown onion

2celery
sticks, diced
1carrot
diced
4cloves garlic
minced
2 tspmixed dried herbs
500gbeef mince
500gsweet potato
peeled, grated
2 Tbsptomato paste
2 Tbspsmoky barbecue sauce
1 Tbspworcestershire sauce
500mlbeef stock
2 cupssavoy cabbage
shredded, roughly chopped
sea-salt flakes
black pepper
freshly ground, to season
350gself-raising flour
2 Tbspthyme
picked, finely chopped plus extra small sprigs to sprinkle
1 cupgrated gouda
plus extra, to sprinkle
150gunsalted butter
cold, grated
1 tspsea-salt flakes
¼ cupmilk
for brushing
400gcan crushed tomatoes
1 bunchflat-leaf parsley
finely chopped
Instructions
Step 1
STEP 1 Preheat oven to 180°C fan-forced (200°C conventional).
Step 2
Put 1 Tbsp of the oil in a large flameproof saucepan (we used a shallow 7cm high, 30cm wide cast-iron pan) and cook onion, celery, carrot, garlic and dried herbs over medium heat for 5 minutes, until softened.
Step 3
Set aside.
Step 4
STEP 2 Put mince and remaining oil in the same pan and cook until browned.
Step 5
Return vegies to pan, then add sweet potato, paste, sauces, stock and crushed tomatoes.
Step 6
Simmer for 10 minutes
Step 7
Transfer to oven and bake covered in foil for 30 minutes
Step 8
Remove foil and cook for a further 15 minutes uncovered
Step 9
Mix in cabbage and parsley and season
Step 10
To make the cobbler put flour , thyme, Gouda, butter and salt in a bowl and rub until a course mixture forms
Step 11
add 2 tablespoons of water and mix into the dough
Step 12
roll out to 2cms thick , cut into 5cm rounds and brush with milk
Step 13
Arrange coblers on mince and sprinkle extra thyme on top
Step 14
bake for 20 minutes or until the cobbler is golden
Step 15
sprinkle with extra cheese and serve
