Instructions
Step 1
Roughly chop the onions, carrots and put them in the bottom of a roasting dish.
Step 2
Cut the bulb of garlic in half and add into the roasting tray.
Step 3
Season the flesh side of the meat with salt and pepper. Then coat in the mustard powder.
Step 4
Flip over to the skin side and season with salt and pepper.
Step 5
Place the meat on top of the vegetables in the roasting tray. Making sure the meat is not touching the bottom of the tray.
Step 6
Pour the beef stock around the meat. Cover and cook at 160 degrees for 4 hours
Step 7
After four hours turn the oven up to 180 degrees, take of the cover and return to the oven for 30 mins.
Step 8
After 30 mins remove the meat and put into a chopping board. Cover with foil and allow to rest for one hour.
Step 9
Cut into slices and enjoy
