If you love mashed potatoes as much as I do, then surely you find yourself always making a bit too much than necessary 😅 it happens to me all the time, so I always try to find a creative way to use my leftovers. 😋 This recipe transforms your mashed potatoes’ leftovers into a delicious crispy snack

For the topping:

Step 1
Preheat oven to 200C (fan)
Step 2
Transfer your mashed potatoes to the piping bag and cut off the tip (about 2cm )
Step 3
Line the baking tray with the parchment and start piping small rounds (about 4cm diameter) Don't make the large, as they will spread slightly in the oven.
Step 4
Using a spoon create a cavity(if the mashed potato is sticky, just wet the spoon)
Step 5
Drizzle with olive oil, sprinkle with salt, pepper and paprika and bake for 40 minutes or until golden and crispy.
Step 6
When ready, let it cool, then top it with a topping of your choice. I topped mine with pesto hummus, more paprika and basil leaves 😋
