If you love mashed potatoes as much as I do, then surely you find yourself always making a bit too much than necessary 😅 it happens to me all the time, so I always try to find a creative way to use my leftovers. 😋 This recipe transforms your mashed potatoes’ leftovers into a delicious crispy snack Enjoy!

Transfer your mashed potatoes to the piping bag and cut off the tip (about 2cm )

Line the baking tray with the parchment and start piping small rounds (about 4cm diameter) Don't make the large, as they will spread slightly in the oven.

Using a spoon create a cavity(if the mashed potato is sticky, just wet the spoon)

Drizzle with olive oil, sprinkle with salt, pepper and paprika and bake for 40 minutes or until golden and crispy.

When ready, let it cool, then top it with a topping of your choice. I topped mine with pesto hummus, more paprika and basil leaves 😋
