Chicken and Cranberry Dressing

Ingredients

extra virgin olive oil
6 cupscornbread
crumbled
4 cupsrotisserie chicken
chopped or shredded
2 cupsfrozen chopped celery onion and bell pepper mix
1 ½ cupsdried cranberries
or cherries
8 sliceswhite bread
firm, torn into bite-size pieces
3eggs
large, lightly beaten
2 x 14 ozcans chicken broth
2 x 10.75 ozcream of chicken soup
cans
½ tspground black pepper
0.44 cupbutter
cut into pieces
whole-berry cranberry sauce
Instructions
Step 1
Grease slow cooker with EVOO.
Step 2
Place cornbread in crockpot.
Step 3
Add chicken and next 7 ingredients; toss gently.
Step 4
Dot with butter.
Step 5
Cover and cook on HIGH 4 hours or on LOW 7 hours or until dressing is puffed and set in center.
Step 6
Stir before serving.
