Instructions
Step 1
Add all liquid ingredients to large stock pot.
Step 2
Whisk together all dry ingredients. Mix them into liquid in stock pot.
Step 3
Bring contents to boil, then turn off heat, and remove from heat.
Step 4
Add a stick of butter and let it melt completely.
Step 5
To rapidly cool and dilute the solution, pour solution into ice. Stir solution.
Step 6
Add to 14 fryer halves of chicken and brine up to 18 hours. Roy Note: only seven halves per container
Step 7
Either grill on medium heat until 165 degrees Fahrenheit or smoke at 225 degrees.
