Instructions

Step 1
If you buy your lotus root fresh (and not already boiled), peel and slice, and then boil in water, salt, and vinegar for 10 minutes.
Step 2
Soak the lotus root slices in water while you heat up the pan to fry them in.
Step 3
Heat up the oil over high heat. Once ready, dry the lotus root slices and toss them in. Sauté for about 3 minutes in the oil.
Step 4
Mix together the soy sauce, mirin, and Korean plum sauce in a separate bowl.
Step 5
Add the garlic and ginger to the pan with the lotus root, along with the soy sauce mix. Mix around a bit, to get the flavors familiar with one another.
Step 6
Add dashi stock and bring to a boil, then lower the heat. Cook the broth/sauce down slowly.
Step 7
Finally, add the corn syrup, sesame oil, sesame seeds, black pepper (optional), and brown sugar. Mix everything around to warm everything through and mix the flavors.
Step 8
