Creamy and cheesy Mac n cheese

Mac n Cheese is one of my family’s favorite side dish. This recipe is super creamy and extra cheesy which is exactly the way we love it.

Instructions

Step 1
Boil macaroni in pot of salter water. Cook al dente (usually 1-2 minutes before the package states), drain and drizzle on some oil olive.
Step 2
Over medium heat, melt butter and add flour. Whisk together and cook for 1-2 minutes then add in 2 cups of half and half. Continue to whisk together then pour in the other 2 cups. Cook on medium until the roux is thickened and smooth but not clumpy. Turn off heat and stir in 1.5 half cups of Colby jack/cheddar cheese. Mix throughly and until cheese melts. Stir in another 1.5 cups then add in the macaroni. Mix to combine.
Step 3
Transfer half to a 9x13 baking dish, then top with 1 cup of mozzarella and 1/2 cup Colby jack cheese. Repeat with the remaining macaroni mix and top with the rest of the cheese. Bake at 350 degrees for 15-18 minutes.
