Ingredients
4 servings
2 teaspoonsavocado oil
or coconut oil
1 cupsliced mushrooms
½ cupred bell pepper
chopped
4 teaspoonsfresh ginger
minced, peeled
4garlic cloves
minced
3 cupsChicken Stock
or fat-free, lower-sodium chicken broth
1 ¼ cupscoconut milk
2 cupschicken breast
shredded, cooked
½ cupgreen onion
strips
3 tablespoonsfresh cilantro
chopped
2 tablespoonsfresh lime juice
Green chillis
to taste
Instructions
Step 1
1. Heat a Dutch oven over medium heat. Add oil to pan; swirl to coat. Add mushrooms and peppers and saute
Step 2
Blend ginger garlic chilies and cilantro with lime juice till smooth then add to pot. cook 1 minute.
Step 3
Add chicken stock and coconut milk and chicken and cook gently until you’re ready to eat.
