Ingredients
4 servings
1 teaspoonolive oil
3garlic cloves
smashed with the side of a knife
2 cupsbaby spinach
chopped
2 cupswater
¾ teaspoonkosher salt
10 ounceswhole wheat pasta
such as ziti, or cavatappi
2 cupsmarinara sauce
homemade, or jarred
½ cuppart skim ricotta
¼ cupgrated pecorino romano
1 cuppart-skim mozzarella cheese grated
Instructions
Step 1
Heat a pot on high, when hot add the oil and garlic; stir 1 minute, or until golden.
Step 2
Add water and salt to the pot to deglaze, making sure the garlic is not stuck to the bottom of the pot.
Step 3
Add spinach and pasta and stir.
Step 4
Pour the marinara sauce evenly over the uncooked pasta, making sure it's covering all the pasta. Do not stir.
Step 5
Cover and cook over med-low heat, covered about 16 to 20 minutes, or until pasta is cooked, stirring half way.
Step 6
Then open the lid, stir the pasta, dollop in the ricotta, top with Pecorino and the mozzarella.
Step 7
Cover the lid 3 to 4 minutes, until the cheese melts.
