Instructions
Step 1
Preheat grill to med. heat (make sure grates are clean).
Step 2
If you aren't using nonstick aluminum foil, you'll need to make sure you spray foil really well with nonstick cooking spray to keep potatoes from sticking while cooking.
Step 3
Place cubed potatoes on each of 2 aluminum foil squares; add 1 tbsp. butter to each & sprinkle with salt & pepper, to taste. Cover each pile of potatoes with ½C shredded cheese and ¼C bacon.
Step 4
Wrap foil securely around potatoes; pierce foil with knife several times to vent steam while cooking.
Step 5
Place on preheated grill; cover grill & cook (45-60 min.) until potatoes are tender.
Step 6
Sprinkle with sliced green onions and serve with more butter on the side.
Step 7
OVEN: These can be made in the oven as well. Place on baking sheet in 375F oven for about 45 min. until potatoes are fork tender).
