Instructions
For the beetroot puree
Step 1
Boil or steam beetroot or carrot. Alternatively wilt spinach in the microwave
Step 2
Add to blender with a splash of water and puree until smooth
For the pasta
Step 3
Place flour in a mound on a worktop and make a well in the center
Step 4
Add salt and puree
Step 5
Mix slowly with a fork
Step 6
Knead for a few minutes
Step 7
Wrap and refrigerate dough for 30 minutes
Step 8
Roll out dough and cut
Step 9
Leave for 30 minutes or so to dry slightly
Step 10
Bring pot of water with salt and oil to the boil
Step 11
Cook for a couple if minutes until tender
