Esther’s Ceviche

I have tweak this recipe to our taste. Truly delicious. The key is cutting everything small so a single chip is loaded with deliciousness.

Instructions

Step 1
Soak the onion slices in salt water for about 10 minutes, rinse well and drain.
Step 2
Mix all the seafood together in large bowl. Be sure lime juice just covers all the meat. Cover and place in refrigerator while chopping other vegetables.
Step 3
Finely chop all the vegetables. Add all the chopped vegetables to the seafood.
Step 4
In another bowl add ketchup, orange juice, oil and salt and pepper. Whisk together and add it with all the chopped vegetables to the seafood mixture. Gently combine.
Step 5
Cover and Let it sit in the fridge for 4 hours letting the lime juice “cook” the seafood.
Step 6
Serve with chips and/or crackers
