Ingredients
8 servings

2 tablespoonsextra virgin olive oil

2 tablespoonsbutter

1onion
diced

6cloves garlic
minced

4 cupsbeef broth

3 tablespoonstomato paste

4carrots
large, diced

6celery stalks
diced

1 ozdry ranch dressing mix
packet

1 ozdry ranch dressing mix
packet

2 x 14.5 ozcans crushed tomatoes

32 ozfrozen meatballs

mozzarella cheese
Shredded, or parmesan cheese for garnish

Instructions
Step 1
Plug in your instant pot and press the saute button.Once pot heats up,add oil and butter.
Step 2
Add diced onion and cook for 2 to 3 inutes. Add in garlic and saute for 30 second more.
Step 3
Add beef broth and stir in tomato paste, carrots celery and ranch seasoning.
Step 4
Add frozen meatballs and top with crushed tomatoes.
Step 5
Close and lock the lid
Step 6
Press the pressure cook button and set a time for 7 minutes.
Step 7
Once the cook time is complete, do a quick release of the pressure by turning the knob to venting.
Step 8
Pour soup into surfing bowls and top with garnishes.
