Instructions

Step 1
Peel and cut the potatoes into chunky chip shapes. Rinse and then leave to soak in cold water for 20 mins to release the starch. Rinse again and pat dry. Place in a bowl and add 1tbs of extra virgin olive oil, a pinch or two of dried Rosemary and some ground rock or sea salt. Mix and stir, coat and cover.
Step 2
Heat the air fryer to 200C for 5 mins. When ready add the chips. Cook on 200C for 20-25 mins but this will depend on how thick you cut your chips and what variety of potatoes you use. The key is remove the fryer draw from time to time and shake to make sure the chips are tossed about. Once ready serve alongside your cut of lamb or just in a bowl with some vinegar and mayo.
