Roasted Tomato Sauce

Instructions
Step 1
Put whole tomatoes snugly into baking tray. Pour oil over tomatoes to wet and leave thin layer on base of baking tray.
Step 2
Season well with salt and pepper. Add a couple of bay leaves tucked into tomatoes. Sprinkle with a couple of teaspoons of red wine vinegar.
Step 3
Cook on over at 200 degrees or Gas 6 for about 30 minutes until skins just start to blacken. The dish should be juicy.
Step 4
Mash the tomatoes. With a fork. Return to oven for another 15 mins.
Step 5
Use blender to create a smoother sauce or leave as is. Check seasoning.
