Instructions
Step 1
Char the onion and bell peppers either on an open flame or under your oven broiler. Turn them a couple of times over until fully charred and transfer to a bowl, covering. After 10 minutes uncover and peel the skin of the peppers which should come off easily (remove the stem and seeds as well).
Step 2
Into a blender, add the cooked onion and bell peppers, followed by the vinegar, fresh garlic and chilies, and paprika and white pepper. Blend until extremely smooth.
Step 3
Transfer to a pot on medium heat. Add the brown sugar and bay leaf and bring to a boil. Lower down to a simmer and cook for 20 minutes.
Step 4
Finally strain the sauce into a bowl and add the lemon juice, honey and salt. With an immersion blender, slowly trickle in the oil to emulsify the sauce a bit and you’re done! Place in the fridge and serve cold
