Peel and thinly slice the onions. Go as fine as you can manage! Set aside In a bowl, mix the cornflour, curry powder, plain flour, coriander, garlic and coriander. Then gradually add the water to form a batter. Place the onion in and coat until fully covered. Heat a large non-stick pan with vegetable oil (enough to cover the bottom of the pan). This bit gets messy! Create two patties from the onion bhaji mix and place in the pan. Cook for 5 minutes on each side or until crispy and golden. Meanwhile prepare your buns and coriander mayo. Add the natural yogurt, mayo and coriander, plus a little bit of salt to a bowl and mix. Spread on the top and bottom of each bun. Layer up chopped lettuce, the onion bhaji and mango chutney. Serve with fries of course!
