Ingredients
4 servings
3 cupschicken stock
3 Tbspolive oil
1yellow onion
large, chopped
2 cupsSpanish rice
4garlic cloves
chopped
½ tspsaffron threads
soaked in 1/2 cup water
1 tsppaprika
1 tspcayenne pepper
salt
2roma tomatoes
chopped
½ cupOctopus
frozen
8mussels
cooked, frozen
8shrimps
large, peeled and deveined
0.25red bell pepper
cut into strep
0.25yellow bell pepper
cut into strep
8asparagus
use 4 inch from top
¼ cupfresh parsley
chopped
Instructions
Step 1
In a large deep pan, heat to medium-high, add olive oil and garlic.
Step 2
Add the chopped onions, cook the onions for 2 minutes, then add tomatoes.
Step 3
Add the rice, and cook for another 2 minutes.
Step 4
Add 3 cups chicken stock, add water with the saffron. Add paprika, cayenne pepper, and salt.
Step 5
Place octopus, mussels, shrimp, red bell pepper, yellow bell pepper, and asparagus.
Step 6
Bring to a boil and then cover with the lid cook on low heat for about 20 minutes until rice absorbs the water.
Step 7
Sprinkle chopped parsley on top, and serve.
