Instructions
Step 1
In the bowl of the instant pot, combine broth, coconut milk, soy sauce, fish sauce, honey, peanut butter and curry paste.
Step 2
Add the chicken, mushrooms, red pepepr, ginger and garlic.
Step 3
Cover and cook on high pressure for 10 minutes.
Step 4
Use quick release to vent.
Step 5
Set pot to saute. Shred chicken. Stir in the noodles, lime juice and spinach. Add the chicken back. Let sit for 5 min or until noodles are soft.
