Instructions
Step 1
Preheat the oven to 400°F and line a standard 12-cup muffin tin with liners or lightly grease and flour the cups.
Step 2
In a large bowl, combine the orange zest, juice, oil, and milk, and whisk to combine.
Step 3
In two batches, incorporate the cornbread mix.
Step 4
Gently fold in the blueberries.
Step 5
Spoon the mixture into the muffin cups, filling to just under the rim.
Step 6
Bake until golden and a toothpick inserted into the center comes out clean, 15 to 18 minutes.
