Malted Chocolate Chip Blondies

Blondies (i.e. blonde brownies) are basically like a super gooey chocolate chip cookie. These are taken to the next level by mixing in malted milk powder which adds a super delicious caramelised depth to them. I like including pecans for crunch but leave them out if you're not a fan!

Instructions

Step 1
Preheat the oven to 180C and line a 20cm (8–inch) square tin with baking paper.
Step 2
Place the butter in a medium pot and place over a medium-low heat. Let it melt then continue to cook it until the butter foams up and smells nutty then remove from the heat. Leave to cool until only lukewarm.
Step 3
Once the butter has cooled, stir in the sugar and beat the eggs in one at a time until well mixed. Add the vanilla extract, salt, baking powder, bicarbonate of soda, flour and malted milk powder. Stir together until completely mixed. Lastly fold in half the chocolate and half the pecans. Spread the batter into the prepared tin and top with the remaining chocolate and pecans.
Step 4
Bake for 25-30 minutes until puffy and browned on top but still soft in the middle. Remove from the oven and set aside to cool for 20 minutes. Once slightly cooled, remove from the pan and slice into 16 squares. Keep in an airtight container at room temperature for up to 5 days.
