3 lbpork shoulder

1 ½ cupsMojo Chipotle
15 ozpineapple

1can chipotle in adobo sauce
1sweet onion

Instructions
Step 1
Cut pork into fist sized pieces
Step 2
Thinly slice onion
Step 3
Add pork, mojo, onion, chipotle and sauce, and pineapple to Instant Pot
Step 4
Pressure cook for 60 minutes. Let pressure release naturally. Preheat broiler to high.
Step 5
Remove pork, shred and spread out over a sheet pan.
Step 6
Set Instant Pot to saute. Reduce liquid by a third.
Step 7
Spread garlic all over the pork. Spread two to three cups of the liquid over the pork.
Step 8
Broil until the top is browned, stir and brown again.
