Instructions
Step 1
Chop cookies in a food processor until you have fine crumbs. Set aside.
Step 2
Beat heavy cream until soft peaks form. Set aside.
Step 3
Beat cream cheese until creamy. Add in confectioners' sugar, vanilla extract, and milk and beat until smooth. Gently fold in whipped cream. Set aside.
Step 4
Place cookie butter in the microwave for 30 seconds until fully melted. Sel aside.
Step 5
To assemble the dessert: Sprinkle i tablespoon of cookie crumbs into the bottom of a clear 5-ounce dessert cup. Pipe or carefully spoon a layer of cheesecake filling, then pipe or spoon a layer of the melted cookie butter. Top with 1 tablespoon of cookie crumbs. Repeat one more time: cheesecake filling, cookie butter, and cookie crumbs.
Step 6
Immediately before serving, top each dessert cup with a whole cookie, if desired. Refrigerate until ready to serve. Enjoy!
