Juicy & tender SCD-friendly venison meatballs with all my favorite pizza-inspired spices. Layered with spinach, shaved warm, and fresh tomato for a perfect appetizer recipe!

Instructions
Step 1
Combine all of the ingredients in a large mixing bowl.
Step 2
Using a spoon (or your hands), mix until well-combined and all of the ingredients appear to be evenly distributed.
Step 3
Scoop out the mixture in 1-2oz. pieces. Form into balls by rolling between the palms of your hands.
Step 4
Place the meatballs in a lightly greased air fryer basket and air fry at 375F for 10 minutes. (Oven method: place the meatballs on a baking sheet and bake at 400F for 20 minutes).
Step 5
Assemble the skewers by layering a spinach leaf, 2 pieces of shaved parmesan, and 1/2 of a grape tomato on top of the meatball. Use a wooden toothpick to keep the ingredients in place.
Step 6
I recommend serving these warm with no-sugar-added pizza sauce!
