My grandmother made these for us all the time, but especially at Thanksgiving. My cousins and I made sure the pot was empty pretty quickly. Later, my aunt picked up making them for family. I decided I needed to be able to make these, so I recorded all the steps my aunt did, and was able to recreate them almost perfectly. No, there is no chicken actually cooked with these dumplins.

Instructions

Step 1
1. Place chicken into large pot, cover with water, add salt. Place in refrigerator overnight. Alternately, place items in an instant pot, cook for 45 minutes with natural release.

2. After removing from refrigerator, drain off water and recover with fresh water. Add salt.
Step 3
3. Turn on medium heat and let cook for at least 4 hours. Looking for broth with yellow on top after cooking.

4. Remove all chicken from broth, and debone. You will not be using this chicken for the recipe, plan on using it in other recipes.

5. Strain broth to remove any large pieces. Place back in large pot.
Step 6
6. Place can of cream of chicken soup into broth, stir until fully mixed, and add salt as needed.
Step 7
7. Turn remaining broth to a boil while preparing the dough.
Step 8
8. Remove 2 cups of broth into large mixing bowl. Remove a second 2 cups of broth into a sperate container, which may be used as needed. If needed, you can add 32oz of chicken stock and 1 tbsp of chicken Better than Bouillon to the main pot to replace the removed broth.
Step 9
9. Add self-rising flour into mixing bowl with broth. Stir until dough is thick enough that you can dip it out of the bowl with a spoon.
Step 10
10. Add a small amount of flour to dough to help spoon be able to dip dough out without sticking to the spoon.
Step 11
11. Using a tablespoon, dip dough out, making sure no more than ½ the spoon has dough on it. Drop the dough ball into the boiling broth, but do not place the spoon into the broth. Make sure when placing dough into the boiling broth, you do Not place a dough ball on top of another dough ball in the pot. Make sure to move dough balls around so the new dough ball goes directly into the broth without touching other dough. Failure to do this will result in a LARGE DUMPLIN which isn’t the goal.
Step 12
12. Continue to add dough balls to the broth until all dough is gone. Add flour in small amounts to dough as needed to keep dough from sticking to spoon. Add remaining broth to dough if dough gets too dry. When dough is gone, add all remaining broth back into pot.
Step 13
13. When all dough is in the broth, turn heat off of dumplins completely, cover and let sit until warm, approximately 20 minutes.
