Instructions

Step 1
• Preheat your oven to 350°F (180°C). Grease a 9-inch (23 cm) round cake pan with butter and line the bottom with parchment paper. • In a medium-sized bowl, whisk together the flour, baking powder, and salt. Set aside. • In a large mixing bowl, cream together the sugar and softened butter using an electric mixer on medium speed until light and fluffy, about 2-3 minutes. • Add the eggs, one at a time, to the butter mixture, mixing well after each addition. Add the almond extract and mix to combine. • Gradually add the flour mixture to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined, making sure not to overmix. • Gently fold in the ground almonds using a spatula or wooden spoon. • Pour the batter into the prepared cake pan and smooth the top with a spatula. Scatter the sliced almonds evenly over the top of the cake. • Bake for 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean. Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. • Prepare the glaze: In a small bowl, whisk together the powdered sugar, milk (or water), and almond extract until smooth. Adjust the consistency by adding more milk or powdered sugar if needed. • Once the cake has cooled completely, drizzle the glaze over the top, allowing it to drip down the sides. Let the glaze set for a few minutes before serving. Enjoy your delicious Swedish Almond Cake!
