Instructions
Step 1
1. Chicken— you can boil 2 chicken breast in water with just salt and pepper or season it how you would like then shred it, or do what I did use a store bought rotisserie chicken and shred the chicken breasts.

2. To a hot skillet add in 2 Tbsp olive oil, garlic, onion, bell pepper and sauté for about 5 to 6 minutes until the vegetables are softened.

3. Next add in the shredded chicken. Season it with the spices, give it a good mix then put it back on the heat for about 2 more minutes.

4. Take it off the heat, then add in the queso, shredded cheese and cilantro, mix everything together really well.

5. Preheat the oven to 350°, then start filling and roll the tortillas.
Step 6
6. Spoon a few tablespoons of the chicken mixture onto the lower third of a tortilla. Roll the tortilla tightly.
Step 7
7. Place the rolled tortillas seam side down on a parchment-lined baking sheet, spray with some avocado cooking spray or any cooking spray you might have.
Step 8
8. Bake at 350° for 25 to 30 minutes until golden and enjoy.
