Matcha crepe cake

An utterly devine and decadent japanese dessert for Matcha lovers! I made this in a cookery class with Suzue aoyama (www.suzueaoyama.com) I would say this recipe could be modified to different flavours such as chocolate or strawberry (strawberry perhaps more difficult as it has too much moisture for the crème.)

Instructions

Crepes

Step 1
1. Melt the unsalted butter and put to the side to cool while you put to together dry ingredients

2. Place the flour, sugar and salt in a bowl. Make a well.

3. In a separate bowl, crack the eggs and mix briefly. Add the milk and mix well
Step 4
4. Gradually pour the liquid into the centre of flour. Continuously mix the mixture to combine the flour and add the liquid little by little

5. If the mixture has lumps, you may sieve it. (optional)

6. Ideally rest the mixture for 30 minutes, but not essential.

7. Prepare the flying pan or griddle; put some cooking oil on the pan, remove excess oil by pouring in a jug or wiping away with paper.

8. Over a medium heat. Pour a small ladle (about 28mls) of mixture on pan. Cook until the edges are dry and the liquid has firmness. Flip over the crepe and cook further 30seconds. Cool on cooling rack.

9. Continue the process until you make between 10 to 15 pancakes.

Chantilly matcha crème

Step 10
1. Mix together the matcha powder and icing sugar well.

2. Whisk together the cream and sugar until ribbon stage is formed

Assembly

1. Place a small amount of crème on the centre of serving place or cake card. Place your first crepe on top. this will stop it moving around.
Step 13
2. Pour 25-30mls (one ladleful) of cream and spread evenly with a palette knife on your crepe and place your next crepe on top.

3. Continue method until you have 12-15 layers of crepe. Place an extra cream on top of your cake with palette knife. Smooth the surface evenly.

4. Put the cream around crepe tower and gently scrape with palette knife or scraper.

5. Whisk the rest of cream firmer and pipe the cream on the edge of crepe on top surface.

6. Dust the matcha powder on top. If you would like to decorate with strawberries or other fruits you can place on top.

7. Rest in the fridge for at least 30minutes before serving. By resting in the fridge, it will be easier to slice.
