Instructions

Step 1
Heat the oven to 150C
Step 2
Pour the heavy cream into a saucepan with the vanilla extract and bring almost to the boil.
Step 3
In a bowl stir together egg yolks and sugar (until paler in colour and a bit fluffy.)
Step 4
Pour the hot cream into the beaten egg yolks, stirring with a whisk as you do so.
Step 5
Pour the cream into the ramekins.
Step 6
Place ramekins into the roasting tin and pour in hot water(about 2cm up the sides of the ramekins)
Step 7
Put them in the oven and bake for 40-50 minutes or until the mixture is softly set. To check, gently sway the roasting tin and if the crème brûlées are ready, they will wobble a bit like a jelly in the middle. Don’t let them get too firm.
Step 8
Let them to cool in roasting tin first, then put in fridge overnight (or for 4-6 hours).
Step 9
When ready to serve, sprinkle with 1tsp of custard sugar, then use a blow torch to caramelise it.
