2 lbLondon broil
shoulder cut preferred
1 cupbeer
1juice of lime
1 Tbsphoney
kosher salt
to taste
freshly ground black pepper

Arugula Chimichurri
Instructions
Step 1
In a small bowl, combine garlic, cumin, chili powder, oregano and olive oil. Run spice mixture over London broil and place into ziplock bag.
Step 2
Add beer, lime juice, honey; seal bag. Marinate the meat in the refrigerator for 3 hours or up to overnight
Step 3
Remove meat from marinade, pat dry, discard marinade. Place meat in pan and bring to room temperature for 20 min while preheating grill/broiler.
Step 4
Season with salt and pepper. Grill or broil on big on for 6-8 min per side or 8-10 for thicker shoulder cut or until desired doneness
Step 5
Allow meat to rest for 10 minutes. Slice thinly against the grain.
Step 6
Prepare chimichurri- blend all ingredients until smooth, scraping down sides as needed. Serve with London broil.

If preparing in advance bring to room temperature before serving. Do not warm
