Instructions

Step 1
To a food processor add the dates, peanut butter, oat milk, rice malt syrup and vanilla extract. Process until smooth, adding more oat milk if needed.
Step 2
Combine the chocolate and coconut oil in a small microwave-safe bowl. Microwave in 20-second increments, stirring between each, until fully melted.
Step 3
Pour the chocolate into a mini muffin silicon tray, filling each cup about 2/3 of the way. Dollop 1 - 2 tbsp of caramel inside each and drizzle over the remaining chocolate to cover.
Step 4
Set in the freezer for 20 minutes, or until the chocolate has set.
