Instructions
Step 1
Start by preheating your oven to 350° and dice 1/2 an onion

Step 2
Add oil to frying pan, sauté onion, once all the onions are translucent, add ground beef and cook to completion.

Step 3
Drain your beef/onion mixture, put back in frying pan and add taco seasoning with 3/4th cup of water. Leave to simmer for 10 minutes

Step 4
While simmering, lather each tortilla in beans and queso(optional, you can use shredded cheese instead) 1 by 1 and leave to the side while waiting for meat to finish simmering.

Step 5
Once meat has finished simmering, add beef to the tortillas then roll up like a taco and place in a 9x13 baking dish

Step 6
After all tacos are rolled and placed in pan, cover all enchiladas in the enchilada sauce. (You might have extra but it’s up to you if you want to add all or not) then sprinkle as much shredded cheese on top as your heart desires

Step 7
Place in oven for 25 minutes

Step 8
Take out of oven, let it rest for 10-15 minutes then enjoy!!
