Baked Tacos

This really makes 3-4 servings, depending on how many tacos people eat. Should make about 10 tacos in total. Feel free to top the finished product with tomato, lettuce, sour cream, hot sauce, etc. Meat mixture is also great in soft tacos.

Instructions

Taco Meat Mixture

Step 1
Finely Chop Onion, Garlic, & Bell Pepper. Cook in a hot pan until soft (3-4 minutes).

Step 2
Add ground beef and cook until fully browned & all liquid is evaporated (Draining will reduce flavor & happiness). Do this with the pan pretty hot to caramelize meat mixture some. Color = flavor.
Step 3
Push meat mixture to one side exposing pan space. Add tomato paste and cook 1-2 minutes. Once done, stir tomato paste into the meat mixture.

Add all spices (Add more chipotle powder or other peppers of your choice to increase heat level, if so desired).
Step 5
Add chicken broth, black beans, & oregano. Stir until all is well incorporated. Cook until 92% of the liquid is gone. If it is too wet, the taco shells will fall apart.
Step 6
Poor mixture in Taco shells & top with cheese. Bake for about 8 minutes at 350 degrees.

Store bought taco shells are the best for this, but feel free to make your own out of tortillas or magic. Bake shells at 350 degrees for about 8 minutes prior to putting meat inside.
