Instructions
Step 1
Weight/measure out and mix all the dry ingredients in a large mixing bowl.
Step 2
Start bringing the dough together with a spoon while trickling in some warm water.
Step 3
Keep adding water until enough of the flour is hydrated to make a rough dough come together
Step 4
Use hands now to knead the dough for ~10 minutes or until smooth and minimally tacky
Step 5
Rest the dough for 30 minutes
Step 6
Divide into 8, small pieces and roll out each on a lightly floured surface.
Step 7
Cook on medium-high heat on a tawa or a well-greased cast iron pan. Once small bubbles form one one side, flip to cook the other side. This takes 2-3 mins
