Instructions

Step 1
Preheat the oven to 350 degrees Fahrenheit.

Wash and cut the yellow squash into small medallions or cut into pieces. Put pieces in large bowl.
Step 3
In another bowl, combine soup, mayonnaise, egg, cheese, onions, salt and pepper. Pour over squash and stir until well blended. Pour into casserole dish.
Step 4
Place the crackers in zipper bag or kitchen towel, and crush with rolling pin or meat tenderizer. Pour into a bowl.
Step 5
Melt the butter in microwave and stir into crackers until moist. Spread over top of casserole.
Step 6
Cover casserole with foil and bake for 30 minutes. Uncover casserole and bake additional 20 - 30 minutes until top is bubbling and golden brown.
Step 7
Prior to serving, top with diced fresh basil.
