Instructions

Step 1
Pre heat oven to 400°F. Spread out half your bag of tatter tots evenly in your baking dish.

Bake tatter tots for 20 minutes.
Step 3
When done pull your tatter tots out and smashed them and/or chop them with a spatula. This will be easier for the egg to cook evenly.

Lay your breakfast sausage on top. You can either crumble in or you do patties. Then put in back in the oven for 12 minutes or until sausage is cooked through.
Step 5
While your sausage is cooking whisk 4 large eggs together then add 2 tablespoons of queso cheese to your eggs.
Step 6
When your sausage is done add your egg mixture on top. Then bake for 10 minutes. (If you did sausage patties you can chop that up like your tatter tots before adding the egg)
Step 7
Lastly add your shredded cheese on top let that melt in the oven and your done.
