Step 1
To the prepared mashed potatoes, add cheese, jalapenos, and bacon. Mix well.
With a melon baller or small ice cream scoop, create small balls of potatoes and dip in flour, followed by egg wash, and finally the panko bread crumbs.
Deep fry or pan fry in olive oil about two minutes or until you see the cheese start to ooze out slightly. Serve nonfat greek yogurt mixed with ranch dip seasoning prepare this before you start the pancakes and refrigerate until ready to serve.
