Instructions
Step 1
Heat oven to 160c (fan). Line two large baking trays with non-stick baking paper.
Step 2
Using an electric beater, beat the egg whites until frothy, then add the sugar and beat for 3 minutes, until thick and white.
Step 3
Add ground almonds, honey, orange zest and cardamom, fold until incorporated.
Step 4
Using two dessert spoon, form walnut-sized ball of dough and toss, a few at a time, in a bowl of icing sugar.
Step 5
Make sure to pack on the icing sugar.
Step 6
Transfer to the lined baking tray and repeat with remaining mixture.
Step 7
Cook for approximately 15 minutes, then check. Outside should be forming a slight crust while centre is still a little soft.
