Step 1
In a blender or food processor, grind 1 1/4 C oats into a fine powder. Place in a medium sized bowl.

Add remaining oats, cinnamon, baking soda and salt to the flour bowl. Mix well.

Chop pretzels into pea sized pieces. Don’t worry if there’s a bunch of crumbs, you’ll be using those too.
Step 4
Beat margarine and brown sugar with a hand mixer in a separate bowl or in a stand mixer until fluffy, about 2 minutes.

Add in egg and vanilla. Beat until light, about 1 minute.

Add together the dry ingredients and wet ingredients. Mix just until partially combined.
Step 7
Add chopped pretzels to dough. Mix until everything is fully combined.
Step 8
With a cookie scoop or a spoon, portion out small balls of dough onto a lined cookie sheet. No need to space them out at this step.

Top the dough balls with any remaining pretzel pieces and crumbs. Place cookie sheet into freezer for 10 minutes.

Preheat oven to 350 degrees.

After 10 minutes, remove cookie sheet and spread out the balls so there is at least 2 inches between each. I ended up using 2 sheet pans.

Bake for 12-14 minutes. Remove from oven and leave cookies on their pan for at least 5 minutes before moving.

Let cool completely on a wire rack.
