Coffee Protein “Ice-cream” Bombs

Instructions

Step 1
Make the ice cream. Add the bananas, cottage cheese and peanut butter to a blender. Blend until smooth and spoon the mixture into an ice cube tray. Place in the freezer for 2 hours.
Step 2
Make the filling. Add the peanut butter and maple syrup to a small bowl and whisk to combine. Evenly distribute the mixture over the individual ice cream cubes. Add a few peanuts to each one and freezer for another 45 minutes.
Step 3
Melt the coffee bar in a microwave safe bowl on high in 30 second increments. Once it is melted, dip a couple of the frozen cubes into the melted coffee bar and drizzle the remaining over the rest.
Step 4
Place each cube on a parchment lined baking sheet and place back in the freezer for 15 minutes.
