Instructions
Step 1
1. In a pot, bring 1/2 cup quinoa and 1 cup water to a boil then simmer for 10-20 minutes * you can also use precooked quinoa I love the trader joe's fully cooked frozen quinoa
Step 2
2. Drizzle 2 tbs olive oil and the juice of 1/2 lemon into the pot on medium heat with cooked quinoa mixing regularly until the quinoa begins to get brown and crispy
Step 3
3. In the meantime, place 2-3 pieces of prosciutto on a pan and fry for 3-4 minutes or until crisp
Step 4
4. transfer quinoa to a bowl and add lettuce, artichokes, olives, feta, and prosciutto
Step 5
5. In your salad bowl spoon 2 tsp pesto, a squeeze of lemon, and throw salad until everything is coated evenly
