Instructions

Step 1
Seperate the eggs into a thoroughly cleaned mixing bowl.
Step 2
With the whisk attachment, beat the egg whites until they they start to become foamy
Step 3
Add the pince of salt and the cream of tartar and beat until stiff peaks are formed
Step 4
Start adding the castor sugar, 1 spoon at a time until all of it is incorporated
Step 5
Add the vanilla essence
Step 6
Beat for an additional minute
Step 7
Line baking trays with baking paper
Step 8
Pipe your meringue into desired shapes onto the baking paper
Step 9
Place in oven at 90°C (Fan-assisted) and dry out for 100 to 150 minutes
Step 10
Store in an airtight container
