Ingredients
8 servings
½ cupbutter
softened
½ cupshortening
1 ¼ cupsugar
1 ½ tspbaking powder
½ tspsalt
3eggs
lightly beaten
1 tspvanilla
3 cupsap flour
1can pie filling
Glaze
Instructions
Preheat oven to 350F
Step 1
Beat butter & shortening with hand mixer until just combined; add sugar, baking powder, & salt, beating until fluffy.
Step 2
Add eggs & vanilla alternately with flour (not all of flour can be mixed in, so mix remainder with a wooden spoon (by hand.)
Step 3
Add half of batter to bottom of ungreased 8”x8” baking pan; spread batter out. Bake 12 min.
Step 4
After removing from oven, carefully spoon pie filling on top (spread out.) Finally, top with spoonsful of remaining batter. (Do not spread out, just drop over as much filling as possible.
Step 5
Bake until light brown (30-40 min.) Meanwhile, make glaze by mixing ingredients with a fork.
Step 6
Cool in pan; drizzle glaze on top & serve from pan.
