• In a food processor, combine the flour, sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs. Slowly add the ice water and continue to pulse until the dough comes together. • Turn the dough out onto a lightly floured surface and shape it into a disk. Wrap it in plastic wrap and refrigerate for at least 1 hour. • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. • In a large bowl, combine the strawberries, sugar, cornstarch, vanilla extract, and lemon zest. Toss until the strawberries are evenly coated. • On a lightly floured surface, roll out the dough into a 12-inch circle. Transfer the dough to the prepared baking sheet. • Arrange the strawberry mixture in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the strawberries, pleating as necessary. • Brush the dough with the beaten egg and sprinkle with coarse sugar. • Bake for 25-30 minutes, or until the crust is golden and the strawberries are bubbly. Let cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely. • Serve warm or at room temperature.
