Wash lemons
Step 2
Zest lemons
Step 3
Blanche tested lemons in boiling water for 1 minute

Remove lemons from water and reserve 500 ml (1,000 if doubling) of the water

Cut lemons in half and juice (500 ml) (1,000 ml if doubling)
Step 6
Add sugar and zest to the blanching water
Step 7
Bring to a boil
Step 8
Add the lemon juice and bring it back to a simmer
Step 9
Strain the mixture
Step 10
Put strained mixture in jars and store in fridge.
Step 11
To serve mix cordial, simple syrup and sparkling water in desired amounts.
