Ingredients
4 servings
3 Tbsparrowroot powder
plus 1 tsbp if needed
1.5 poundschicken
skinless, organic, cut into 2 inch pieces
2 Tbspavocado oil
½ cupcoconut aminos
⅓ cupwhite wine vinegar
2 Tbsptomato paste
1 Tbspclover honey
pasteurized
1 Tbspalmond butter
¼ cupwhole cane sugar
such as Sucanat, or granulated sugar
2 Tbspfresh ginger
peeled and chopped
2 Tbspgarlic oil
½ cupwater
white rice
cooked, for serving, optional
¼ cupscallions
chopped, dark green parts only, optional
Instructions
Step 1
In a large resealable plastic bag, combine 3 tbsp of arrowroot powder and the chicken. Seal the bag and shake to coat the chicken.
Step 2
On your pressure cooker, select Saute and preheat the cooking pot.
Step 3
Add the avocado oil.
Step 4
Place the chicken in the pot and brown on each side. Select Cancel.
Step 5
In a medium bowl, whisk the coconut aminos, vinegar, tomato paste, honey, almond butter, cane sugar, ginger, garlic oil, and water until fairly smooth. Pour the mixture over the chicken in the pressure cooker pot. Lock the lid in place and close the pressure release valve. Select the Manual function and cook on High Pressure for 8 minutes.
Step 6
Do a Quick Release to vent the steam. Once completely vented, remove the lid. Check the sauce consistency. If it needs to be thicker, mix in another tbsp of arrowroot powder, select Saute, and cook for 5 minutes more. Serve the chicken immediately over white rice, if desired, topped with scallions (if using), or on its own.
