Keto Instant Pot Brownies

Ingredients

1 cupalmond flour
4 Tbspcream
3 Tbspbutter
½ cupSugar-Free Semi-sweet chocolate chips
¼ cupcocoa powder
2 tspbaking powder
⅛ cuperythritol
1egg
Instructions
Step 1
General: You'll be using primarily a wet mix and dry mix.
Step 2
1. Wet Mix: Melt the chocolate chips and butter together in the microwave for 30 seconds. Stir. Keep melting and stirring in 30 second intervals until it's smooth. Add the cream and stir until it's glossy and brown. It will look spotty at first, but as the cream warms up, it will meld with the chocolate.
Step 3
2. Dry Mix: Whisk together the almond flour, erythritol, cocoa powder, and baking powder. Add the egg to the dry mix, and make sure all of it is mashed together. It will be so thick it sticks to the spoon.
Step 4
3. Add Wet Mix: Add the wet mix to the dry mix and stir it all together. It will be really thick still. This will help it stay fudgy while it cooks.
Step 5
4. Cut a piece of parchment to fit the Springform Pan of your Instant Pot. Butter it, then put it butter side down on the bottom of the pan. Butter the top of it. Smooth out the cracks because they'll shape the brownies if you let them.
Step 6
5. Butter the sides of the ring, and then plop the brownie mix into the pan. Press it gently, and turn the pan while you hold the spatula so it smooths out nicely and fills the pan.
Step 7
6. Pour 1 cup of water in the bottom of the Instant Pot, and set the rack in. Put the springform pan on top of the rack, and close the lid. Seal.
Step 8
7. Set the Instant Pot at Low Pressure for 3 minutes. Allow a natural pressure release for about 20 minutes. Don't shorten this, it's what allows the egg to set completely without turning into chewy dog biscuits. Like those OTHER brownies, but I digress.
Step 9
8. When you think they're done, stick a toothpick in the center. It will come out with little bits on it, and some wetness also. The top will feel wet, but that's okay. Put a plate over the top of the pan, and then flip it over. THEN unclip the pan.
Step 10
9. Eat them all.
