Instructions

Step 1
Preheat oven to 220'C/Gas mark 7 In a pan, melt the butter and wilt the spinach - drain and juices and season with salt and pepper to taste
Step 2
Place the spinach in a shallow dish, crack the 2 eggs onto the spinach and sprinkle liberally with nutmeg
Step 3
Cover with slices of your favourite cheese
Step 4
Bake in a hot oven for 5-10 minutes
Step 5
Serve with crusty bread
