Lemon Pancetta Spaghetti

Instructions

Step 1
Fill large pot with water, bring to a boil, and salt water. Add the pasta and cook to al dente.
Step 2
While pasta cooks, heat skillet over medium with extra-virigin olive oil.
Step 3
Add pancetta and cook till crisp, 2-3 min.
Step 4
Remove the pancetta with a slotted spoon to a plate lined with a paper towel. Save oil.
Step 5
Turn heat to low, add sliced garlic and cook for 4-5min, till golden brown.
Step 6
Remove garlic chips with a slotted spoon and place with pancetta.
Step 7
Turn heat up to medium, add red pepper flakes and cook for 30 seconds.
Step 8
Add arugula, tossing it in the oil to wilt.
Step 9
Once wilted, add the chicken stock, lemon juice, salt and pepper and cook for 2 minutes.
Step 10
Drain hot pasta and add it to arugula. Add lemon zest and toss.
Step 11
Turn off head and add butter and Parmigiano, toss to melt.
Step 12
Toss in pancetta and garlic chips and serve.
